Ingredients:
2 ripe bananas, mashed
1/2 cup peanut butter
1/2 cup unsweetened applesauce
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
2 cup quick or old fashioned oats
1/4 cup carob chips (or semisweet chocolate chips)
1/2 cup unsweetened shredded coconut
Directions:
Preheat the oven to 180 degrees C.
Line a baking sheet with parchment paper or a non-stick baking mat.
Mash the bananas with a fork, then add peanut butter, applesauce, and vanilla.
Mix in the oats, chocolate chips, and coconut and stir until well combined.
Spoon the cookie mixture onto the lined baking sheet. Bake for 15-20 minutes and allow to cool.
